Ingredients
1 lb ground beef
1 egg
Brussels sprouts, chopped
Zucchini, sliced
Squash, sliced
Salt/pepper
2 Tbsp Extra Virgin Olive Oil
Instructions
- Mix in a bowl ground beef and 1 egg. Mix until it’s well mixed, but don’t over mix. Form ground beef mixture into small beef hamburger patties.
- Heat a skillet to medium/high heat and place small hamburger patties in the skillet. Cook on one side for about 6 minutes until the meat is cooked half way through then flip. Put a lid for the last 5 minutes to cook all the way through.
- Preheat oven to 350 degrees. Place Brussels sprouts, zucchini & squash in a pan with 2 tbsp of olive oil. Mix vegetables with oil. Cook for 10 minutes.
