Chili

This red chili can be dressed up anyway you like, however I like it Texas style. In Texas, beans are optional and you eat your chili with fritos, sour cream, and cheese on top! In Texas, we call our chili, FRITO PIE. Delicious!

Description

This red chili is perfect for any cold weather occasion!


Ingredients

Scale

2 lbs Ground Beef

1 can diced tomatoes

1 can tomato sauce (8oz)

1 cup onion, diced

2 garlic cloves, diced

1 1/2 Tablespoon cumin

1/2 cup chili powder

2 teaspoon Paprika

Salt/pepper

2 Tablespoons of Mesa

1 cup Chicken stock

1 teaspoon Cayenne pepper (optional)

1 can pinto beans (optional)

Topping:

Sour cream

Fritos

Cheddar Cheese

Fresh jalapeños

Splash of Chalula hot sauce


Instructions

Heat a pot on medium to high heat and add olive oil. Add garlic, onion and cook 2 minutes. Add ground beef, tomato sauce, diced tomatoes, cumin, paprika, and chili powder and cook for 5-7 minutes until beef is cooked through. Add chicken broth and cook for an hour. (If you are using a crockpot, you can put the chili in the crockpot on low for 2-4 hours.)

To thicken up the chili, mix mesa with 4 ounces of water and add to chili. Stir and cook for 20 minutes to thicken.

Top with sour cream, fritos, and cheddar cheese. (Fresh jalapeños and Chalula, optional)
