Chicken Ritz Casserole

Description

This is a crowd please with lemon chicken with Ritz cracker on top!


Ingredients

2 packages chicken breasts

2 cups sour cream

2 cans cream of chicken soup (instructions for homemade version below)

3 Tbl. lemon juice

4 cups crushed Ritz crackers

1  Tbl. poppyseeds (optional)

1  stick butter, melted


Instructions

Ways to cook the chicken: 1. Cook chicken breasts in water seasoned with salt, pepper, celery, and half an onion OR sauté garlic, onion, celery in butter and add rotisserie chicken.

Homemade cream of chicken soup: Melt butter in a saucepan and once it’s melted, add 1/2 a cup of flour. Stir the flour in the butter for a few minutes, then add 2 cups chicken broth and 1 cup of whole milk. Season with a dash of salt, pepper, garlic powder, and onion powder.

  1. Place cooked chicken in bottom of casseroles.
  2. Make a mixture of sour cream, soup, and lemon juice and spread equally over chicken.
  3. Pour Ritz crackers evenly over top, and top off with poppyseeds.  Drizzle one stick of melted butter over casserole.
  4. Bake at 350 until brown and bubbly, 35-40 minutes covered. Uncover last  7-10 minutes.
