Try this delicious easy healthy dinner. At least once a week, my family loves to have salmon and to be honest, it’s so simple and so good! I typically cook the salmon in the oven so it’s quick and easy. No need to get your grill going because it comes out perfectly in the oven. I recommend you grab a few seafood seasonings and see which one you like best. You really can’t go wrong! My favorite one is from Williams Sonoma called Potlatch Seasoning. Honestly, all of their seasonings are delish!
Roasted Salmon with Sautéed Vegetables

Ingredients
2–4 Salmon filets (I recommend fresh salmon from your local grocery store, not frozen)
Seafood Seasoning (any seafood seasoning will work)
Extra Virgin Olive Oil
Grass-Fed Butter
Zucchini, sliced
Squash, sliced
Broccoli, chopped
Rice (optional)
Instructions
- Season the salmon with any dry seasoning for seafood. Look at labels and make sure they don’t have any sugar in the ingredients.
- Preheat oven for 350 degrees and place salmon on a baking sheet lined with aluminum foil. Roast for about 15 minutes. Once there is white oozing from the salmon, that’s your signal that it’s ready!
- Heat a skillet to medium/high heat and add 1 tablespoon of grass fed butter. Place sliced zucchini and squash to the pan and sauté for about 5-6 minutes until brown on each side.
- Heat another skillet medium/high heat and 1-2 tbsp of olive oil and place chopped broccoli in pan. Add a dash of garlic powder to the vegetables. Sauté for about 5-6 minutes until done. Season with salt.
- Optional: Prepare rice and top with a little bit of grass-fed butter.
